おいしい「洋なし」発見
ＺＵＫＵＤＡＳブログ担当の塩原です。
ぶどうの収穫も終わり、2005ヌーボーの出荷も始まって、ようやく一息ついています。夢中ですごしたこの時期は葡萄の旬を少し食べ、今、冷蔵庫に入れておいたナイアガラを美味しく食べてます。最後に収穫した葡萄は酸味が少ないため、常温だと物足りない味ですが、冷やすと格段に美味しくなるのです。
そして、最近はとても美味しい「洋なし」を発見しました。その名は「グランドチャンピオン」といいます。甘いけれどその酸味に驚きました。適度な硬さも好きになりました。作った桔梗ヶ原の塩原農園さんにお聞きしたところ、これができるのに10年もかかり、また少ししか実をつけないので一度止めたけれど、お客様の要望があったためまた作り始めたそうです。冷蔵庫に保管してクリスマスまで美味しく食べられるそうです。赤ワインで煮てレストランのデザートに使われているそうです。他には「ゼネラルフラーク」も大玉で美味しいです。
